    Prepare equipment

    Preheat the oven to 200°F (95°C). Line two baking sheets with parchment paper or silicone mats. Fit a large piping bag with a medium star (or round) tip and set aside. Ensure mixing bowl (preferably metal or glass) and beaters are completely clean and dry.

    Separate eggs

    Separate 4 large eggs while cold, placing whites in the clean mixing bowl. Let whites sit at room temperature for 20–30 minutes to reach about 68–72°F (20–22°C) — this helps volume.

    Begin whipping

    Start beating the egg whites on medium speed until they become foamy and opaque, about 1–2 minutes. Add 1/2 tsp cream of tartar and 1/8 tsp fine sea salt once foamy to stabilize.

    Add sugars gradually

    With the mixer on medium-high, gradually add the granulated sugar in 4 additions (about 1 tablespoon every 10–15 seconds), allowing the sugar to dissolve between additions. After the granulated sugar is incorporated, stream in the 1/4 cup superfine sugar similarly to help achieve a glossy meringue.

    Whip to stiff peaks

    Continue whipping on high speed until the meringue forms glossy, stiff peaks and the sugar is dissolved (rub a small amount between your fingers — it should feel smooth, not gritty). This usually takes 5–8 minutes depending on your mixer.

    Flavor & color

    Reduce mixer to low and fold in 1/2 tsp vanilla extract. Add 1 tsp neutral gel food coloring and 1 tsp black cocoa powder (optional) a little at a time, folding gently with a silicone spatula or running the mixer on low for a few seconds, until you achieve an even grey color. Adjust with tiny amounts of gel color to reach desired shade — grey is achieved by using a very small amount of black or navy gel so the meringue remains light grey, not black.

    Transfer to piping bag

    Spoon the meringue into the prepared piping bag, pressing down to remove air pockets and close the top so meringue doesn't fall out while piping.

    Pipe bouquet shapes

    On the prepared baking sheets, pipe meringue flowers: for rosettes, hold the bag perpendicular and pipe a spiral about 1.5–2 inches across; for small blossoms, pipe stars or dollops about 1 inch wide. Leave space between meringues (they won't spread) and insert wooden skewer stems into the base of selected meringues before baking if you want meringue-on-a-stick.

    If using sprinkles or edible silver dust, lightly dust or place sprinkles on the meringues before baking so they adhere.

    Bake and dry

    Bake in the preheated 200°F (95°C) oven for 1 hour 15 minutes to 1 hour 30 minutes, until meringues are dry to the touch and lift cleanly from the paper. Turn off the oven and leave the meringues inside with the door closed or slightly ajar for 30–60 minutes to continue drying and cool slowly — this helps prevent cracking.

    Cool completely

    Remove meringues from the oven and cool completely on the baking sheets. Once cool, they should be crisp on the outside and hollow/light inside. If any feel sticky, return to low oven for additional 10–20 minutes and re-test.

    Prepare skewers: If you plan to use wooden skewers as stems, you can wrap the exposed wooden part with a thin strip of parchment or floral tape for appearance; avoid coating the part inserted into the meringue with anything that could leach oil (oil will deflate meringues).

    Attach meringue to stems: For meringues piped directly on sticks, they are ready to display once cooled. For meringues piped on paper, gently attach cooled meringues to skewers by piping a small dot of leftover meringue (or a bit of royal icing) onto the end of a skewer and pressing the meringue base against it; let set until secure.

    Arrange bouquet: Arrange the meringue flowers in a foam block, vase with protective paper, or laid flat for a bouquet effect. Handle gently — meringues are fragile. If gifting, place in an airtight box with tissue paper cushion to prevent breakage.
