Strawberry Fruit Slush Base
Prepare strawberries
Wash the fresh strawberries thoroughly, remove the green hulls, and pat them dry. If strawberries are large, quarter them so they blend evenly.
Make strawberry purée
Place the hulled strawberries, cold water, granulated sugar, and fresh lemon juice into a blender. Purée on high until the mixture is completely smooth, about 30–45 seconds. Taste and adjust sweetness by adding up to 1 tablespoon honey or agave if desired; blend briefly to combine.
Add ice and blend to slush
Add the ice cubes to the blender with the strawberry purée. Pulse a few times, then blend on high until the mixture reaches a smooth, slushy consistency without large ice chunks, about 20–40 seconds depending on blender strength. If the mixture is too thick, add up to 1/2 cup of sparkling or still water and blend briefly until desired texture is reached.
Assemble & serve
Taste and adjust: taste one spoonful and adjust brightness or sweetness. Add a little more lemon juice for brightness or up to 1 tablespoon more sweetener if needed; pulse to combine.
Serve immediately: divide the strawberry slush evenly between 4 chilled glasses. Top each glass with a splash of sparkling water if you like a lighter, fizzy finish.
Garnish: tuck 1–2 fresh mint leaves and a fresh strawberry slice onto the rim of each glass. Serve with a straw and a small spoon for scooping thicker portions.
Storage note: best enjoyed immediately. If you must store, place in a covered container and freeze for up to 2 days; re-blend briefly before serving.
