Prepare Sesame Ingredients

    Toast sesame seeds

    Place a small dry skillet over medium heat. Add white and black sesame seeds and toast, stirring frequently, until fragrant and lightly golden (about 1–2 minutes). Remove from heat and let cool.

    Optional sesame brittle/granola prep

    If using sesame brittle or crunchy granola, roughly crush into small pieces for topping and set aside.

Make the Smoothie

    Peel the ripe banana and cut into large chunks. Reserve a few thin slices for garnish.

    In a blender add banana chunks, almond milk, yogurt, matcha powder, honey or maple syrup, vanilla extract, tahini (if using), lemon or lime juice, and a pinch of sea salt.

    Add ice cubes to the blender. Secure the lid and blend on high until completely smooth and creamy, about 30–60 seconds depending on blender strength. Stop and scrape down sides if needed and blend again.

    Taste and adjust sweetness or matcha intensity: add another 1/2 tsp honey/maple for more sweetness or an additional 1/4 tsp matcha for more green tea flavor. Blend briefly to incorporate.

Assemble & Serve

    Pour the smoothie into a chilled glass.

    Swirl a little tahini (if using) across the inside of the glass before pouring for an attractive streak and extra sesame flavor.

    Sprinkle the toasted white and black sesame seeds over the top, then add crushed sesame brittle/granola for crunch. Arrange reserved banana slices on the rim or float on top.

    Serve immediately with a spoon or straw.
