Tea & Citrus Base

Method

Tea & Citrus Base

  1. 1

    Brew the tea

Bring 600 ml water to a near boil (about 95°C / 203°F). Remove from heat and steep 2 black tea bags for 3–4 minutes for a strong but not bitter brew. Remove the tea bags and discard.

  2. 2

    Sweeten and season

While the tea is still warm (not boiling), stir in 2 tablespoons honey and a pinch of sea salt until fully dissolved. Allow the tea to cool to warm (about 40–45°C / 104–113°F) for best mixing with juices.

  3. 3

    Add citrus juices

Stir in 120 ml freshly squeezed grapefruit juice and 80 ml freshly squeezed orange juice. Taste and adjust sweetness with up to 1 additional teaspoon honey if desired. Chill the combined tea-citrus mixture in the refrigerator for at least 20 minutes, or proceed with ice to cool quickly.

Avocado & Assembly

  1. 4

    Prepare the avocado

Scoop half a ripe avocado into a small bowl and mash lightly with a fork until mostly smooth but with a few small chunks remaining. Season the avocado lightly with a tiny pinch of salt to enhance flavor.

  2. 5

    Prepare citrus garnish

If using grapefruit supremes, carefully slice between membranes to release segments. Alternatively thinly slice grapefruit and orange into rounds or half-moons for garnishing.

  3. 6

    Assemble the drink

Fill two tall glasses evenly with ice cubes (about 1/2 cup ice per glass). Divide the mashed avocado between the glasses, spooning it onto the ice or slightly along the glass wall for visual appeal. Pour the cooled tea-citrus mixture evenly over the avocado and ice (about 200–220 ml per glass).

  4. 7

    Garnish and finish

Top each glass with 2 grapefruit segments and 2 orange slices, and 3 fresh mint leaves. Optionally stir once gently with a long spoon to incorporate a bit of avocado into the tea — the avocado will create a silky, creamy mouthfeel without fully blending into the drink. Serve immediately.
