Prepare the Steak

Take the porterhouse steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Preheat the grill or a cast-iron skillet over high heat.

Season the Steak

Generously season both sides of the steak with salt and black pepper.

Sear the Steak

Add olive oil to the hot grill or skillet. Place the steaks on the grill or skillet and sear for about 4-5 minutes on one side. Flip the steaks and add butter, garlic, and rosemary to the pan.

Baste and Cook

Using a spoon, baste the melted butter over the steaks while cooking for another 4-5 minutes for medium-rare, or until desired doneness.

Rest the Steak

Remove the steaks from the grill or skillet and let them rest for about 5-10 minutes before slicing.

Prepare the Sides

While the steak is resting, prepare your choice of sides, such as lobster gnocchi mac and cheese, green beans, or mashed potatoes.

Slice the porterhouse steak and serve it with your chosen sides.
