Preparation and Cooking
Make the Ravioli
Take the fresh pasta sheets and cut them into circles using a round cutter. Place a small amount of burrata cheese and chopped lobster meat in the center of each circle. Moisten the edges with water and fold the pasta over to create a half-moon shape. Press the edges to seal tightly.
Cook the Ravioli
Bring a large pot of salted water to a boil. Gently drop the ravioli into the boiling water and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
Prepare the Smoked Paprika Cream
In a saucepan, melt the butter over medium heat. Add the heavy cream and smoked paprika, stirring to combine. Allow it to simmer for a few minutes until it thickens slightly. Season with salt and black pepper to taste.
Serve
Plate the cooked ravioli and drizzle the smoked paprika cream over them. Garnish with fresh pea shoots and serve immediately.
