Prepare the Ingredients

Slice the Andouille sausage and dice the chicken into bite-sized pieces. Chop the bell peppers, onion, and celery, and mince the garlic.

Brown the Sausage and Chicken

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Andouille sausage and chicken pieces, cooking until browned, about 5-7 minutes.

Sauté the Vegetables

Add the chopped onion, bell peppers, and celery to the pot. Cook for about 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute.

Combine Ingredients

Add the canned diced tomatoes, chicken broth, rice, Cajun seasoning, bay leaves, salt, and pepper. Stir to combine.

Cook the Jambalaya

Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.

Stir in the shrimp and cook for an additional 5 minutes, until the shrimp are pink and cooked through.
