In a small bowl, combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, hot sauce (if using), lemon juice and black pepper. Whisk until smooth and taste — adjust seasoning with a pinch more salt or a little extra relish for sweetness. Chill while you cook patties.

Form patties
Divide the ground beef into 4 equal portions (about 5 oz / 140 g each). Gently form each portion into a loose ball then flatten into a 3.5–4 inch diameter patty about 3/4 inch thick; do not overwork the meat. Press a shallow dimple in the center of each patty with your thumb to reduce doming during cooking.
Cook
Heat a cast-iron skillet or griddle over medium-high heat until very hot. Add the neutral oil and spread. Place patties, seasoned side down, and cook undisturbed for 3–4 minutes until a deep brown crust forms. Flip once and immediately place a slice of American cheese on each patty. Cook another 2–3 minutes until patties reach medium (about 160°F / 71°C) and cheese is melted. If using bacon, cook bacon in a separate skillet until crisp and drain on paper towel.

While patties cook, prepare toppings: thinly slice the white onion and separate lettuce leaves. If you prefer softened onions, quick-pickled: toss sliced onion with 1 tbs vinegar and a pinch of sugar and salt for 5–10 minutes.
To assemble each FAT STELLA: spread about 1.5 tbs of Stella Sauce onto the bottom bun. Place lettuce leaf, then the cheeseburger patty. Top with 2 pickle slices and a few onion rings. Add bacon slice if using. Spread a thin layer (about 1 tps) of sauce on the top bun and close the sandwich. Press lightly to meld.
Serve immediately with fries or chips.
