Method

Bagels

  1. 1

    Slice and toast

Slice each bagel horizontally. Toast bagel halves in a toaster or under a broiler until golden and slightly crisp (about 2–4 minutes depending on appliance). Keep toasted halves warm in a low oven (100–120°C / 210–250°F) if assembling just before service.

  2. 2

If offering butter, place butter in a small dish at room temperature so guests can spread it on non-cream-cheese options.

Cream cheese & spreads

  1. 3

Remove cream cheeses from the refrigerator 10–15 minutes before serving to soften slightly for easier spreading. Place plain cream cheese, chive cream cheese, and any specialty spreads in small bowls or ramekins. Smooth the surface with a spatula and optionally garnish the chive cream cheese with a sprinkle of chopped fresh dill.

  2. 4

Provide a small spreader or butter knife in each bowl for hygienic serving.

Vegetable accompaniments

  1. 5

    Prepare tomatoes

Wash the tomatoes, remove the core, and slice into 1/4-inch (about 0.6 cm) thick rounds. Arrange the slices overlapping on a platter. Lightly season the tomato slices with 1/2 tsp kosher salt and 1/2 tsp freshly ground black pepper to enhance flavor.

  2. 6

    Prepare red onion

Peel the red onion and slice very thinly into rings or half-rings. If raw onion is strong, soak the rings in cold water for 5 minutes, then drain and pat dry to mellow the flavor. Place the onion on the platter near the tomatoes.

  3. 7

Measure out capers into a small bowl and rinse briefly if they are very salty. Garnish with chopped fresh dill on a small plate if using.

Optional protein & garnish

  1. 8

Arrange smoked salmon slices on a chilled plate or board in overlapping folds so guests can easily take portions. Keep covered and chilled until service.

  2. 9

Slice cucumber into thin rounds and arrange on the platter as an additional fresh topping. Cut lemons into wedges and place them near the smoked salmon for squeezing.

Assembly & serving

  1. 10

On a large serving board or platter, arrange toasted bagel halves in a fan or in stacks. Place the bowls of cream cheese spreads and butter centrally for easy access. Surround with plates of sliced tomato, onion, capers, dill, cucumber, and smoked salmon. Add lemon wedges on the side.

  2. 11

Provide serving utensils: spreaders for the cheeses, small tongs or forks for salmon, and spoons for capers. Offer plates and napkins so guests can build their bagels.

  3. 12

Suggested plating notes: keep cold elements chilled on a tray with ice beneath if serving for more than 30 minutes; replace perishable items after two hours at room temperature.
