Prepare glass

Choose a tall highball or collins glass. Fill the glass about three-quarters full with ice cubes (roughly 1 cup of ice).

Add garnish

Run the lime wedge around the rim of the glass if desired, then drop the lime wedge into the glass. If using, gently slap the mint sprig between your palms to release aroma and tuck it into the glass beside the ice.

Drink

Slowly pour the chilled 12 fl oz bottle of Topo Chico over the ice and garnish. Pour down the side of the glass to preserve carbonation. Do not stir — let the bubbles do the work.

Taste and, if you prefer more citrus, squeeze the lime wedge into the drink and discard the rind.
