Prepare and toast

Preheat a toaster or toaster oven. Brush one side of each gluten-free bread slice lightly with olive oil (this helps crisping). Toast the bread until golden brown and crisp, 2–4 minutes depending on your appliance. If you prefer buttered toast, immediately spread 1/2 tablespoon unsalted butter on each hot slice so it melts evenly.

Avocado smash

Scoop the flesh from half a ripe avocado into a small bowl. Add 1/2 teaspoon lemon juice, 1/4 teaspoon sea salt and 1/8 teaspoon black pepper. Mash with a fork until mostly smooth with a few small chunks. Spread the avocado evenly over one slice of toasted bread.

Tomato & goat cheese

Spread 1 tablespoon soft goat cheese (or cream cheese) over the second slice of hot toast. Top with 4 halved cherry tomatoes arranged evenly. Drizzle a very small amount (about 1/2 teaspoon) olive oil if desired and sprinkle a pinch of sea salt and a few torn basil leaves.

Sweet honey & cheese option

If you prefer a sweet toast, spread 1 tablespoon goat cheese on a slice, drizzle 1 teaspoon honey over the cheese and finish with a pinch (1/8 tsp) of red pepper flakes for contrast.

Finish and serve

Taste and adjust seasoning as needed (more salt, pepper, lemon). Serve immediately while toast is crisp. Leftover avocado can be stored covered in the refrigerator for up to 1 day with a little extra lemon to slow browning.
