Preheat and prepare

Preheat your Belgian waffle iron according to manufacturer instructions to medium-high heat. Lightly grease the waffle iron with a small brush of neutral oil or cooking spray just before pouring batter.

Mix dry ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined and aerated.

Whisk wet ingredients

In a separate medium bowl, whisk the large eggs until blended. Add the whole milk, melted cooled butter, and vanilla extract; whisk until combined.

Combine wet and dry

Make a well in the center of the dry ingredients and pour in the wet mixture. Using a rubber spatula or whisk, stir gently until just combined. A few small lumps are fine—do not overmix or the waffles will become tough.

Rest batter (optional)

Let the batter rest for 5–10 minutes at room temperature to allow the baking powder to activate and the gluten to relax; this yields lighter waffles.

Cook waffles

Spoon or pour the recommended amount of batter for your waffle iron (typically 1/2 to 3/4 cup for each Belgian waffle) onto the preheated iron. Close the lid and cook until deep golden brown and crisp, about 4–6 minutes depending on your iron. Do not open the iron too early — wait until the indicator or steam reduction signals doneness. Remove waffle carefully and transfer to a wire rack placed over a baking sheet; keep warm in a 200°F (95°C) oven while you cook remaining waffles to maintain crispness.

Prepare berries

Wash the strawberries and blueberries. Hull and slice the strawberries if using. Toss strawberries and blueberries lightly in a bowl; if desired, sprinkle with 1 teaspoon sugar and let macerate 5–10 minutes for juicier berries.

Plate and finish

Place a warm Belgian waffle on each plate. Top with a generous spoonful of fresh berries. Add a tablespoon or more of softened whipped butter to the side or on top. Serve with maple syrup on the side for guests to pour. Optionally dust with powdered sugar just before serving for presentation.

Storage & reheating

If making ahead, cool waffles completely on a rack, then freeze separated by parchment in a sealed freezer bag up to 1 month. Reheat frozen waffles in a 400°F (200°C) oven or toaster oven for 5–8 minutes until hot and crisp.
