Preparation of Octopus

Cook the Octopus

Fill a large pot with water, add sea salt, and bring to a boil. Add the octopus and cook for about 45 minutes or until tender. Remove and let it cool.

Grill the Octopus

Once cooled, cut the octopus into tentacles. Brush with olive oil, season with salt and pepper, and grill on high heat for about 3-4 minutes per side until charred.

Make the Tzatziki

In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Mix well and refrigerate until serving.

Smoked Tomato Salad Preparation

Prepare the Smoked Tomato Salad

In a large bowl, combine halved tomatoes, smoked paprika, sliced red onion, olive oil, balsamic vinegar, torn basil, and season with salt and pepper. Toss gently.

Grilled Red Onion Preparation

Grill the Red Onion

Brush the sliced red onion with olive oil and season with salt. Grill for 2-3 minutes per side until tender and slightly charred.

Preserved Lemon Sauce Preparation

Make the Preserved Lemon Sauce

In a small bowl, mix finely chopped preserved lemons with olive oil, minced garlic, chopped parsley, and lemon juice. Stir until combined.
