Korean Salmon

Method

Preparation Instructions

1

Marinate the Salmon

In a bowl, mix soy sauce, gochujang, honey, sesame oil, minced garlic, and grated ginger. Place the salmon fillets in the marinade and let sit for at least 30 minutes.

2

Prepare Asparagus

While the salmon is marinating, heat a grill or skillet over medium-high heat. Toss the asparagus with a little olive oil, salt, and pepper. Grill for about 5-7 minutes until tender and slightly charred.

3

Char the Pineapple

In the same skillet or grill, add the diced pineapple and cook until caramelized and charred, about 3-4 minutes.

4

Cook the Salmon

Remove the salmon from the marinade and grill or pan-sear it over medium heat for about 4-5 minutes on each side, or until cooked through.

5

Prepare Pineapple Rice

In a bowl, combine the cooked rice, charred pineapple, and sliced green onions. Mix well and season with salt and pepper to taste.

6

Serve

Plate the grilled salmon with the asparagus and pineapple rice. Garnish with toasted sesame seeds and additional green onions if desired.
