Prepare and sweat eggplants

Trim ends from the eggplants and slice lengthwise into 1/4–1/3-inch (6–8 mm) thick slices. Arrange slices in a single layer on a rack or large tray and sprinkle both sides evenly with coarse salt. Let the eggplant sit for 30–40 minutes to draw out bitterness and excess moisture. After sweating, rinse the salt lightly under cold water and pat slices very dry with clean kitchen towels or paper towels.

Optional breading and shallow-frying

If using the breading section (traditional Neapolitan approach often lightly fries slices): set up a breading station with flour, beaten eggs (seasoned with 1/4 tsp salt), and breadcrumbs. Dredge each dry eggplant slice in flour, shake off excess, dip in egg, then coat with breadcrumbs. Heat a large skillet over medium-high heat with 4–6 tbsp olive oil until shimmering. Fry slices in batches 1–2 minutes per side until golden — they should remain slightly tender. Drain on paper towels and keep warm. Alternatively, for a lighter version brush both sides of eggplant with olive oil and roast on baking sheets at 220°C/425°F for 12–15 minutes, turning once, until golden and soft.

Roast tomatoes and garlic

Preheat oven to 220°C/425°F. Halve the tomatoes (or leave small plum tomatoes whole) and place cut-side up on a rimmed baking sheet. Add whole peeled garlic cloves, drizzle with 2 tbsp extra-virgin olive oil, and season with 1 tsp sea salt and 1/2 tsp black pepper. Roast for 25–30 minutes until tomatoes have collapsed, edges are slightly charred and garlic is soft.

Make the puree

Transfer the roasted tomatoes and garlic (squeeze garlic from skins) to a blender or use an immersion blender in a bowl. Add fresh basil leaves (reserve some for layering), and blend to a smooth but slightly textured puree. Taste and adjust seasoning with a little more salt or pepper if needed. If the puree is very loose, simmer briefly in a saucepan over medium heat for 6–8 minutes to concentrate; allow to cool slightly.

Prepare cheeses

Drain the buffalo mozzarella well: unwrap, drain any liquid, and press gently between paper towels to remove excess moisture. Tear or slice mozzarella into pieces about 1/4–1/2-inch thick. Measure out the grated Parmigiano Reggiano and pick the basil leaves you reserved for layering.

Assemble the melanzane parmigiana

Preheat your oven to 190°C/375°F. Choose a 9x13-inch (or similar 3–4 quart) baking dish. Spoon a thin layer (about 3/4–1 cup) of the roasted tomato puree across the bottom of the dish to prevent sticking. Arrange a single layer of eggplant slices to cover the bottom (overlap slightly if needed). Spoon or spread tomato puree over the eggplant in thin even amounts (about 1/2 cup per layer), scatter torn/sliced buffalo mozzarella evenly over the sauce, sprinkle about 2–3 tbsp grated Parmigiano Reggiano, and tuck a few fresh basil leaves among the cheese. Repeat layers: eggplant, tomato puree, mozzarella, Parmigiano, basil, until you finish — aim for 3–4 layers depending on dish depth. Reserve about 2–3 tbsp Parmigiano for the top.

Top and bake

Finish with a final layer of eggplant (or a light smear of sauce), the remaining tomato puree, remaining mozzarella distributed evenly, and the reserved Parmigiano Reggiano sprinkled across the top. Drizzle about 1 tbsp olive oil over the surface and season lightly with 1/4 tsp coarse sea salt and 1/4 tsp freshly ground black pepper. Cover the dish loosely with foil and bake at 190°C/375°F for 25 minutes. Remove the foil and continue baking 10–15 minutes more until the top is bubbling and lightly golden and cheese is melted. If you want a more deeply browned top, briefly set under a broiler for 2–3 minutes watching carefully.

Rest and serve

Remove the melanzane from the oven and let it rest for 15–20 minutes so the layers set (this makes slicing cleaner). Garnish with additional fresh basil leaves before serving. Serve warm or at room temperature — cut into squares and enjoy with crusty bread or as a main course.

Taste a piece and adjust with a small extra drizzle of olive oil or a pinch of flaky sea salt if desired. Store any leftovers refrigerated for up to 3 days; reheat gently in a 170°C/325°F oven covered for 15–20 minutes or slice and warm in a skillet.
