Prepare the Prime Rib
Preheat your oven to 450°F (230°C). Rub the prime rib roast with olive oil, salt, black pepper, garlic powder, and onion powder. Place the roast in a roasting pan and cook in the preheated oven for 20 minutes.
Roast the Prime Rib
Reduce the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare or 140°F (60°C) for medium. Remove from oven and let it rest for 20 minutes before slicing.
Prepare the Au Jus
While the meat is resting, heat the beef broth in a saucepan over medium heat. Allow it to simmer gently, and adjust seasoning with salt and pepper to taste.
Slice the Prime Rib
Once rested, thinly slice the prime rib against the grain.
Assemble the Sandwiches
Slice the baguette in half lengthwise. Fill each piece with sliced prime rib and serve with a side of warm au jus for dipping. Garnish with fresh parsley if desired.
