Method

Prepare Spread and Bread

  1. 1

    Make mustard spread

In a small bowl, whisk together Dijon mustard, mayonnaise, honey, and black pepper until smooth and evenly combined. Taste and adjust honey or mustard to balance heat and sweetness.

  2. 2

Spread softened butter evenly on one side of each slice of bread (this will be the exterior for grilling). On the opposite (interior) side of four slices, spread about half of the mustard mixture (roughly 1/2 tsp to 3/4 tsp per slice). Reserve the remaining spread for the other sandwiches or for extra flavor.

Assemble Sandwiches

  1. 3

Place 1 buttered-and-spread slice of bread (spread side up) on a clean work surface. Top with 2 slices of ham, arranging to cover the bread evenly.

  2. 4

Place 1 slice of Swiss cheese on top of the ham. If you prefer extra cheesiness, overlap the second slice of cheese so there are two cheese slices per sandwich. Add optional garnishes now: 2 pickle slices, 1 leaf of lettuce folded, and 2 tomato slices if using.

  3. 5

Top with another 2 slices of ham (for a hearty sandwich) and finish with the second piece of bread, butter side up. Repeat to make the second sandwich (or remaining sandwiches) so that you have two complete sandwiches.

Cook

  1. 6

Heat a large nonstick or cast-iron skillet over medium-low to medium heat. Allow it to come to temperature for 2 minutes. Place the sandwiches in the skillet, butter-side down. Cook for 3 to 4 minutes, pressing gently with a spatula or a heavy pan (or use a sandwich press) until the bottom is golden brown.

  2. 7

Carefully flip the sandwiches and cook the other side 2 to 4 minutes more, pressing gently, until the bread is golden brown and the Swiss cheese is fully melted. If the bread is browning too quickly before the cheese melts, reduce the heat slightly and cover the pan for 1–2 minutes to trap heat and encourage melting.

Finish and Serve

  1. 8

Transfer the sandwiches to a cutting board. Let rest 1 minute, then slice each sandwich in half on the diagonal. Serve hot with extra pickles or a simple salad if desired.

  2. 9

Store any leftover mustard spread in an airtight container in the refrigerator for up to 5 days. Refrigerate leftover ham and cheese sandwiches and consume within 24 hours for best texture; reheat gently in a skillet or oven to refresh.
