Slice and toast
Preheat the oven to 400°F (200°C). Slice the baguette on a diagonal into 12–16 slices about 1/2 inch thick. Arrange slices in a single layer on a baking sheet.

Toast in the preheated oven 8–10 minutes, or until edges are golden and crisp. For deeper color, broil for the last 1–2 minutes while watching closely.

Remove the bread from the oven and immediately rub the cut/top surface of each slice with the halved garlic clove to impart a subtle garlic flavor. Set aside to cool slightly.

Prepare and blend
Crumble 8 oz feta into a food processor. Add 2 oz softened cream cheese, 2 tablespoons Greek yogurt, 1 tablespoon fresh lemon juice, 1 teaspoon lemon zest, 1 teaspoon honey (optional), 1 teaspoon extra-virgin olive oil, and 1/4 teaspoon freshly ground black pepper.

Pulse the mixture until it becomes smooth and fluffy, about 30–60 seconds. Stop and scrape down the bowl as needed. If the mixture is too thick, add up to 1 tablespoon water or additional yogurt, 1 teaspoon at a time, until a spreadable, whipped consistency is reached.

Taste and adjust seasoning: if too salty, add a touch more honey or yogurt; if too tangy, add a pinch more cream cheese. Transfer whipped feta to a bowl and chill briefly (10 minutes) if it warmed while processing.

Prep tomato mix
In a medium bowl combine 1 cup halved cherry tomatoes (or diced heirlooms), 1/2 cup diced cucumber (if using), 2 teaspoons finely minced red onion, 1 teaspoon red wine or sherry vinegar, 1 teaspoon extra-virgin olive oil, torn basil leaves, and 1/4 teaspoon crushed red pepper flakes (optional). Stir gently to combine and season lightly with a pinch of flaky sea salt.

Taste and adjust: the tomato mix should be bright and slightly acidic to contrast the rich whipped feta. Add more vinegar or a tiny pinch of salt if needed.

Assemble bruschetta: spread about 1 to 1 1/2 tablespoons of whipped feta onto each toasted bread slice, using the back of a spoon to create a small well in the center.

Spoon a generous teaspoon (or more) of the tomato mixture on top of the whipped feta for each slice. Tear or lay additional basil leaves over the top as a garnish.
