Whipped Feta Spread

Drain the crumbled feta briefly on paper towels if very wet. Let cream cheese come to room temperature for 15 minutes so it blends smoothly.

Place crumbled feta, softened cream cheese, Greek yogurt, olive oil, lemon juice, lemon zest, peeled garlic clove, honey, black pepper, and red pepper flakes (if using) into a food processor or high-speed blender.

Pulse to combine, then blend on medium-high until mixture is completely smooth and airy, about 45–60 seconds. Scrape down the sides once and blend another 15–20 seconds. The texture should be light and spreadable; add up to 1 tablespoon water or more yogurt if mixture is too thick.

Halve the cherry or grape tomatoes and place them in a medium bowl.

Add finely diced red onion and chopped basil to the tomatoes.

Drizzle with 1 tablespoon olive oil and 1 teaspoon balsamic vinegar or a few drops of glaze. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Toss gently to combine. Let sit for 5–10 minutes so flavors meld; if tomatoes release a lot of juice, you can spoon off excess liquid or incorporate it into the feta for extra flavor.

Preheat the oven to 425°F (220°C) or heat a grill pan over medium-high heat.

Arrange bread slices on a baking sheet. Brush both sides lightly with 2 tablespoons olive oil.

Toast in the oven until golden and crisp, about 6–8 minutes, flipping halfway; or grill each slice 1–2 minutes per side until char marks appear.

Let the toasts cool slightly so they remain crisp when spread. Spoon or spread about 2 tablespoons of whipped feta onto each toasted slice.

Top with a generous tablespoon of the marinated tomato mixture on each toast, allowing some of the tomato juices to run onto the feta for flavor.
