Prep
Crack 2 large eggs into a small bowl. Add 2 tablespoons of milk or cream. Season with 1/4 teaspoon freshly ground black pepper and 1 teaspoon kosher salt. Whisk vigorously until mixture is uniformly pale yellow and slightly frothy (about 20–30 seconds).

Heat pan
Place a small nonstick skillet over medium-low heat. Add 1 teaspoon unsalted butter and let it melt, swirling to coat the pan. The butter should foam but not brown.

Cook eggs
Pour the whisked eggs into the warm butter. Let sit undisturbed for 10–15 seconds until the edges just begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center, forming soft curds. Continue to gently push and fold the eggs every 5–10 seconds, keeping the heat low so curds remain soft and creamy. Total cook time should be 1.5–3 minutes depending on your stove and pan; remove from heat when eggs are still slightly glossy — they will finish setting from residual heat.

Finish and serve
Taste and adjust salt if needed (use the remaining seasoning sparingly). Sprinkle with 1 tablespoon chopped fresh chives, if using. Transfer scrambled eggs to the menu item as an add-on immediately so they remain warm and tender.
