Method
Prepare Vegetables
Slice the Vegetables
Chop the onion, bell peppers, and tomato into thin strips or bite-sized pieces, and set aside.
Prepare Romaine Lettuce
Wash the romaine lettuce, dry it, and chop it into bite-sized pieces.
Cook Rice and Beans
Heat Refried Beans
In a small saucepan, heat the refried beans over low heat until warmed through, stirring occasionally.
Prepare Mexican Rice
If not cooked yet, prepare the Mexican rice according to package instructions, then set aside.
Grill Vegetables
Heat Grill or Pan
Preheat a grill or a large skillet over medium-high heat and add the olive oil.
Grill the Vegetables
Add the sliced onion and bell peppers to the grill, seasoning with salt, pepper, cumin, and chili powder. Cook for 5-7 minutes until tender and slightly charred.
Add Tomato
In the last minute of cooking, add the chopped tomato to the grill and cook for an additional minute.
Assemble Fajitas
Warm Tortillas
Warm the corn or flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
Build the Fajitas
On each tortilla, layer the grilled vegetables, a scoop of Mexican rice, a spoonful of refried beans, and top with romaine lettuce, crema, and pico de gallo.
Serve
Serve the assembled fajitas immediately with extra toppings as desired.
