Prepare the Protein

Marinate the Protein

In a bowl, combine the olive oil, garlic powder, cumin, salt, and black pepper. Add the steak or chicken and coat it well with the marinade. Let it sit for at least 30 minutes.

Cook the Protein

Heat a skillet over medium-high heat. Add the marinated steak or chicken and cook for 5-7 minutes on each side until cooked through. Remove from heat and let it rest for a few minutes before slicing.

Make the Quesadilla

Assemble the Quesadilla

Place a flour tortilla in a large skillet over medium heat. Sprinkle 1/2 cup each of cheddar and Monterey Jack cheese on half of the tortilla. Add sliced steak or chicken on top of the cheese.

Cook the Quesadilla

Fold the tortilla in half and cook for 3-4 minutes until the bottom is golden brown. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted. Repeat with remaining tortillas.

Prepare the Rice

Cook the Rice

In a saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice and 1 tsp of salt. Reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

Prepare the Beans

Heat the Beans

In a saucepan, combine the canned black beans (drained and rinsed), cumin, garlic powder, and salt. Heat over medium heat for about 5-7 minutes, stirring occasionally until heated through.

Serve

Plate the Dish

On a large plate, serve a quesadilla alongside a scoop of rice and a portion of black beans. Garnish with sour cream, cilantro, and lime wedges.
