Dough

Activate yeast

Combine warm water (about 105–115°F / 40–46°C), sugar, and active dry yeast in a small bowl. Stir gently and let sit 5–10 minutes until foamy.

Mix dough

In a large bowl, whisk together flour and salt. Make a well, add the foamed yeast mixture and 2 tablespoons olive oil. Stir with a wooden spoon until a shaggy dough forms.

Knead

Turn dough onto a lightly floured surface and knead 6–8 minutes until smooth and elastic. Alternatively, knead with a stand mixer fitted with a dough hook for 5–6 minutes.

First rise

Lightly oil a bowl with remaining 1 tablespoon olive oil, place dough in bowl, turn to coat, cover with plastic wrap or a damp towel, and let rise in a warm place until doubled, about 60–90 minutes.

Shape

Punch down the dough, turn out onto a floured surface, and shape into a 12–14 inch round. Let rest 10 minutes while preparing sauce and toppings.

Sauce

Heat 1 tablespoon olive oil in a small saucepan over medium heat. Add minced garlic and cook 30 seconds until fragrant but not browned.

Add crushed tomatoes and tomato paste, stir to combine. Add dried oregano, dried basil, 1 teaspoon salt, and 1 teaspoon black pepper. Simmer on low 10–12 minutes to thicken slightly, stirring occasionally. Taste and adjust seasoning. Remove from heat and let cool slightly.

Prepare vegetables

Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet placed on middle rack. Meanwhile, toss sliced mushrooms, sliced onion, and sliced green pepper with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Sauté in a skillet over medium-high heat 3–4 minutes just to soften and remove excess moisture; remove from heat.

Prepare meats

If sausage isn't already cooked, brown Italian sausage in a skillet over medium heat until cooked through, breaking into crumbles; drain excess fat. Slice or chop ham into bite-size pieces if necessary.

Assemble pizza

Lightly dust a pizza peel or parchment with flour or cornmeal. Stretch or roll the rested dough into a 12–14 inch round. Transfer to the peel or parchment. Spread an even layer of sauce over the dough, leaving a 1/2-inch border. Sprinkle 2 1/2 cups shredded mozzarella evenly over the sauce. Evenly distribute pepperoni slices, cooked sausage, ham pieces, sautéed mushrooms, onions, green peppers, and black olive slices. Sprinkle remaining 1/2 cup mozzarella over top if desired for better melt. Sprinkle red pepper flakes and chopped fresh basil (if using).

Bake

Slide the pizza onto the preheated stone or baking sheet (use parchment if needed). Bake at 475°F (245°C) for 10–12 minutes, until crust is golden and cheese is bubbling and lightly browned. Rotate halfway through baking for even color if necessary.

Finish

Remove pizza from oven, let rest 2–3 minutes. Drizzle a tiny bit of olive oil if desired and slice into 8 pieces. Serve hot.
