Method
Fries
Prepare oven or fryer
Preheat oven to 425°F (220°C) if baking fries. If frying, heat oil in a deep fryer or heavy pot to 350°F (175°C).
Cook fries
If using frozen fries: arrange in a single layer on a baking sheet, drizzle with 1–2 tbsp oil, season with 1 tsp salt and 1/4 tsp pepper, toss, then bake 18–25 minutes, turning once, until golden and crisp. If frying fresh or frozen fries: fry in batches at 350°F (175°C) 3–5 minutes until golden, drain on paper towels, then toss with salt and pepper.
Transfer cooked fries to an oven-safe serving dish or baking sheet lined with foil so they stay hot while you make the cheese sauce.

Add liquids
Gradually whisk in 1 cup milk and 1/4 cup cream, smoothing lumps as you go. Bring mixture to a gentle simmer, whisking constantly, until it thickens enough to coat the back of a spoon (about 3–5 minutes).
Season
Reduce heat to low and whisk in 1/2 tsp Dijon mustard, 1/4 tsp Worcestershire sauce, 1/4 tsp hot sauce (optional), 1/4 tsp salt, and 1/8 tsp black pepper. Taste and adjust seasoning.
If you prefer a glossy, pourable sauce, strain once through a fine mesh to remove any lumps, then return to low heat briefly before pouring over fries.
Assembly and finishing
Arrange the hot fries in an oven-safe serving dish or individual plates. Pour the warm cheese sauce evenly over the fries so they are well coated.
If using toppings, sprinkle 1/2 cup crumbled bacon, 2 tbsp sliced scallions, and 2 tbsp pickled jalapeños over the sauced fries.
For a bubbly, slightly browned finish (optional): place the assembled dish under a preheated broiler for 1–2 minutes, watching closely so cheese does not burn.
Serve immediately while hot and creamy.
