Make the Tortellini Dough

In a mixing bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix until a dough forms. Knead for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling

In a bowl, combine ricotta cheese, ground sausage, diced ham, and grated Parmesan. Season with salt and black pepper. Mix until well combined.

Roll out the Dough

After resting, roll out the dough on a floured surface to about 1/16 inch thickness. Cut into squares (about 2 inches).

Fill the Tortellini

Place a teaspoon of filling in the center of each square. Fold over diagonally to form a triangle, pressing to seal. Bring the two corners together and pinch to form a tortellini shape.

Cook the Tortellini

In a large pot, bring the chicken broth to a simmer. Add the tortellini and cook for about 5-7 minutes until they float to the surface and are tender.

Serve

Ladle the broth and tortellini into bowls. Drizzle with olive oil and garnish with chopped parsley before serving.
