Prep strawberries

Wash strawberries, hull and halve or quarter larger berries so they are roughly uniform. Reserve the nicest 6–8 small berries for garnish if desired.

Make simple syrup

In a small saucepan combine 0.75 cups granulated sugar and 0.5 cups water. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Remove from heat and stir in 1 tablespoon light corn syrup and 1 teaspoon fine sea salt. Let cool to room temperature (10–15 minutes).

Infuse with Opal Basil

Place 0.5 cup packed opal basil leaves in a heatproof bowl. Pour the slightly warm simple syrup over the basil, press leaves gently so they submerge, and allow to steep for 10 minutes to extract aroma and flavor. After steeping, strain syrup through a fine sieve, pressing on leaves; discard leaves and reserve syrup.

Blend the mixture

Place the prepared strawberries in a blender or food processor. Add the strained basil-infused syrup and 2 tablespoons lemon juice. Puree until completely smooth, about 45–60 seconds. Taste and adjust: if overly tart, add up to 1 tablespoon more sugar dissolved in 1 tablespoon warm water; if too sweet, add a teaspoon of lemon juice.

Chill

Transfer the puree to a bowl, cover tightly, and chill in the refrigerator until very cold, at least 1 hour (preferably 2 hours). Chilling improves texture and helps the churned sorbet freeze faster.

Churn

Freeze the chilled puree in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve sorbet consistency (typically 20–30 minutes).

Harden

Transfer sorbetto to an airtight container, smooth the top, press a piece of parchment directly onto the surface to prevent ice crystals, and freeze until firm, 2–4 hours.

Whipped Crème Fraîche

Chill bowl and beaters in the freezer for 10–15 minutes. In the chilled bowl combine 0.75 cup crème fraîche, 0.25 cup chilled heavy cream, 1 tablespoon powdered sugar and 0.5 teaspoon vanilla extract. Whip by hand or with a mixer on medium speed until soft peaks form — the mixture should be light, slightly billowy, and spoonable (do not overbeat into butter). Keep chilled until ready to serve.

Plate & Garnish

Scoop sorbetto using a scooper warmed briefly in hot water and dried. Place one or two quenelles/scoops into chilled bowls or coupe glasses.

Add a generous dollop (about 1 tablespoon) of whipped crème fraîche beside or on top of each scoop.

Garnish with whole opal basil leaves (1–2 per serving) and a light sprinkle of lemon zest if using. For a decorative touch, place a reserved small strawberry on the rim or alongside the sorbet.

Serve immediately. If not serving right away, return sorbet to freezer and remove 5–10 minutes before serving to soften slightly.
