    Chill glass

    Place an old-fashioned glass in the freezer or fill it with ice water while you prepare the cocktail so it's nicely chilled.

    Measure and combine

    In a mixing glass or Boston shaker filled with plenty of ice, add 1.5 oz gentian-based amaro, 0.75 oz bourbon, 0.5 oz sweet vermouth, 0.25 oz allspice dram, 0.25 oz demerara syrup, 2 dashes orange bitters, and 1 dash chocolate bitters.

    Stir

    Stir the mixture briskly with a long-handled bar spoon for 30–45 seconds (about 20–30 rotations) until the exterior of the mixing glass is well chilled and slightly frosted, and the drink is properly diluted.

    Prepare glass

    Discard the ice or water from the chilled old-fashioned glass. Place a single large ice cube into the glass.

    Strain

    Using a julep or Hawthorne strainer, strain the chilled cocktail into the prepared glass over the large ice cube.

    Express and garnish

    Take the orange peel and, holding it about 3–4 inches above the drink, give it a firm twist to express the oils over the surface. Rub the peel around the rim of the glass, then drop it into the drink as garnish.

    Serve

    Serve immediately. Recommend tasting and adjusting future pours of demerara syrup or bitters to personal preference if you prefer slightly drier or sweeter profile.
