Base Chocolate Sorbet

Make chocolate syrup

In a medium saucepan, combine 2 cups water and 1 cup granulated sugar. Bring to a gentle simmer over medium heat, stirring until sugar fully dissolves (about 3–4 minutes).

Whisk in 3/4 cup unsweetened Dutch-process cocoa powder until smooth and no lumps remain. Continue to simmer gently for 1–2 minutes to bloom the cocoa, stirring constantly to prevent sticking.

Remove pan from heat and whisk in 4 oz finely chopped dark chocolate until fully melted and smooth. If using, whisk in 1 tablespoon light corn syrup or glucose to improve scoopability. Add 1 teaspoon fine sea salt and 1 teaspoon vanilla extract; taste and adjust salt or vanilla as needed.

Cool the chocolate base to room temperature (about 30–40 minutes). For faster cooling, set the saucepan over an ice bath and stir occasionally until cooled. Once cooled, cover and chill in the refrigerator until thoroughly cold, at least 2 hours or overnight. Chilling improves texture and reduces churn time.

When ready to churn, give the chilled chocolate base a quick stir and transfer to your ice cream maker. Churn according to manufacturer’s instructions until it reaches a soft-serve consistency (typically 20–30 minutes).

Fruit Swirl (Mango - Raspberry - Blood Orange)

Prepare fruit purées

While the chocolate base chills, make the fruit sauces. For the mango: purée about 1 large ripe mango in a blender until very smooth. Measure 3/4 cup of mango purée.

For the raspberry-blood orange sauce: In a small saucepan, combine 1/2 cup raspberries, 1/4 cup blood orange juice, 2 teaspoons powdered sugar (or to taste), and 1/2 teaspoon lemon juice. Warm gently over low heat until raspberries break down and sauce thickens slightly, about 4–6 minutes. If you prefer a very smooth sauce, pass through a fine-mesh sieve to remove seeds. Cool to room temperature, then chill until cold.

Taste each purée and adjust sweetness with extra powdered sugar if needed. Both purées should be cold before swirling into the churned sorbet.

Assembly & Freeze

Spoon one-third of the churned chocolate sorbet into a shallow, freezer-safe container. Dollop half of the mango purée and half of the raspberry-blood orange sauce over the chocolate layer. Use a small spatula or the back of a spoon to gently swirl—do not overmix; you want distinct ribbons of fruit.

Add another third of the chocolate sorbet, then the remaining mango and raspberry sauces, and swirl again. Top with the final layer of chocolate sorbet and finish with a few light swirls so the surface shows ribbons of fruit.

Cover tightly with plastic wrap or an airtight lid and freeze until firm, at least 3–4 hours (overnight for best texture). Sorbet will firm up considerably in the freezer.

Serve

Remove sorbet from the freezer 8–10 minutes before serving to soften slightly for easier scooping. Use a warm ice-cream scoop (dip in hot water and dry) to make clean scoops.

Spoon into chilled bowls or cones, garnish with 1 tablespoon dark chocolate shavings or cocoa nibs and mint leaves if using. Serve immediately.
