Preheat the Oven

Preheat your oven to 375°F (190°C).

Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a pot of simmering water or in the microwave until smooth. Stir to combine and let it cool slightly.

Prepare Egg Mixture

In a separate bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and a pinch of salt until pale and creamy.

Combine Mixtures

Slowly add the melted chocolate mixture to the egg yolk mixture, stirring continuously until well combined.

Beat Egg Whites

In a clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.

Fold in Egg Whites

Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Prepare Ramekins

Grease individual ramekins with butter and dust with flour, shaking out the excess.

Fill Ramekins and Bake

Pour the soufflé mixture into the prepared ramekins, filling them about 3/4 full. Bake in the preheated oven for 12-15 minutes, or until puffed and set on the edges.

Serve

Remove from the oven and serve immediately, as the soufflés will deflate quickly!
