Method
Prep
Remove ground beef from the refrigerator and let sit at room temperature for 15 minutes while you prepare toppings. This helps even cooking.
Wash and core the tomato; slice into 4 even slices. Rinse and dry lettuce; shred or tear into leaves to measure about 1 cup. Thinly slice the red onion into rings, measure 1/4 cup.
Lightly toast or cook bacon if using: fry or bake until crisp, then drain on paper towels and halve each slice.
Make Patties & Season
Form patties
Place the ground beef in a bowl. Sprinkle the kosher salt, black pepper, Worcestershire sauce, and optional 1 teaspoon yellow mustard over the meat. Gently fold the seasonings into the meat 6–8 times; avoid overworking to keep patties tender. Divide into 4 equal portions (~4 ounces each) and shape into compact patties about 3/4 inch thick and slightly wider than the buns. Press a shallow dimple in the center of each patty with your thumb to reduce doming during cooking.
Cook Patties
Add a teaspoon of neutral oil to the skillet (if using). Place patties on the hot surface, dimple-side up. Cook for 3–4 minutes without moving to develop a crust.
Flip patties once. Immediately place a slice of cheddar on each patty. Cook another 2–3 minutes for medium doneness (internal temperature ~ 160°F/71°C for well done as needed). If you prefer a cheesier melt, cover the pan with a lid for 30–45 seconds to trap steam.
Toast Buns & Assemble
Spread 1 tablespoon mayonnaise on each bottom bun and 1 tablespoon ketchup on each top bun (adjust to taste). Add a few drops of yellow mustard to bottoms if desired.
Place the cheddar-topped patties on the prepared bottom buns. Top each patty with 2 pickle slices, a slice of tomato, shredded lettuce (~1/4 cup per sandwich), and a few red onion rings (about 1 tablespoon per sandwich). Add bacon halves and pickled jalapeños if using.
Cap with the top bun, press gently, and serve immediately while hot.
Serving & Notes
Serve 4 Old Skool Specials with extra ketchup, mustard, and pickles on the side. For best texture, consume within 10 minutes of assembling. Leftover patties keep in the refrigerator for up to 3 days; reheat gently to avoid drying out.
