Prepare egg-yolk custard base

Whisk the 4 egg yolks with 3 tablespoons granulated sugar in a medium heatproof bowl until pale and slightly thickened, about 2–3 minutes. Set a pot of simmering water and place the bowl over it (double boiler). Continue whisking gently for 4–6 minutes until the mixture is warm and slightly thickened (it should coat the back of a spoon). Remove from heat and let cool for 5 minutes.

Incorporate mascarpone

Fold the 16 oz mascarpone into the slightly cooled egg mixture in two additions, gently stirring until smooth and lump-free. Add 1 teaspoon vanilla extract and a pinch of salt; mix to combine. Chill briefly if mixture becomes too soft.

Whip cream and combine

In a separate chilled bowl, whip 1 cup cold heavy cream to soft peaks. Gently fold one-third of the whipped cream into the mascarpone mixture to loosen it, then fold in the remaining whipped cream until homogeneous and airy. Cover and refrigerate while preparing the coffee soak.

Coffee Soak & Liqueur

Combine 1 cup cooled strong brewed espresso or coffee with 1 teaspoon sugar and 2 tablespoons dark rum or coffee liqueur (if using) in a shallow bowl. Stir until the sugar dissolves. Taste and adjust sweetness or liquor as desired. Keep at room temperature so it does not chill the ladyfingers aggressively.

Cake / Ladyfingers

Quickly dip each ladyfinger (or sponge slice) into the coffee mixture for 1 second per side — just enough to moisten but not soak through. Arrange a single layer of soaked ladyfingers tightly in the bottom of a 9x9-inch (or similar) serving dish.

Spread half of the mascarpone mixture evenly over the first layer of soaked ladyfingers, smoothing the top with an offset spatula. If you prefer individual servings, layer in small glasses with the same proportions.

Repeat: dip remaining ladyfingers and place a second layer on top of the mascarpone. Spread remaining mascarpone cream evenly over the second layer, smoothing the surface. Cover and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and the dessert to set.

Chocolate & Garnish

About 10–15 minutes before serving, dust the top evenly with 1 tablespoon unsweetened cocoa powder using a fine sieve. Shave 2 oz bittersweet chocolate over the surface to create curls or flakes. If you want a glossy drizzle, melt 2 tablespoons dark chocolate chips (in 15–20 second bursts in the microwave, stirring between) and drizzle thinly over the top.

Optionally decorate with additional chocolate shavings, a few whole ladyfinger ends, or a light sprinkle of sea salt for contrast. Keep chilled until serving.
