Caramelize onions

Heat olive oil in a medium skillet over medium-low heat. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, until softened and beginning to brown, about 10 minutes. Add brown sugar and balsamic vinegar, increase heat to medium, and continue cooking another 6–8 minutes until deep golden and caramelized. Reduce heat to low and keep warm in the skillet.

Cook tater tots

Preheat oven (or air fryer) per package instructions for the tater tots (typically 400°F / 200°C). Toss tots with 1 tablespoon neutral oil and 1/2 tsp kosher salt in a bowl. Spread in a single layer on a baking sheet and bake until golden and crisp, 18–22 minutes, turning once halfway. If using an air fryer, cook at 400°F for 12–15 minutes shaking once. Keep warm.

Cook sausage

While the tots cook, heat a nonstick skillet over medium heat. Add the sage breakfast sausage (removed from casings and broken into small pieces). Cook, stirring and breaking up, until browned and cooked through, about 6–8 minutes. Drain any excess fat if necessary and transfer to a plate; keep warm.

Scramble eggs

Wipe the skillet or use a separate small skillet and melt 1 tablespoon unsalted butter over medium-low. Whisk the 3 eggs with 1 tsp salt and 1/2 tsp black pepper until combined. Pour eggs into the skillet and cook gently, stirring frequently, until soft-scrambled and just set, 2–3 minutes. Remove from heat slightly early — eggs will finish cooking from residual heat. Keep warm.

Make spicy mayo

In a small bowl combine mayonnaise (3 tbs), sriracha (1 tsp), smoked paprika (1/4 tsp), and lemon juice (1/2 tbs). Taste and adjust heat or acidity. Refrigerate until assembly.

Melt cheese

When the tater tots are hot and crisp and sausage and eggs are ready, arrange the tots on a serving plate or cast-iron skillet. Evenly distribute the cooked sausage over the tots, then top with the scrambled eggs. Drape the 3 slices of White American cheese over the hot mixture. Place the plate briefly under a broiler or cover with a lid for 30–60 seconds until cheese has melted.

Assembly & Garnish

Spoon the caramelized onions over the melted cheese, then drizzle the spicy mayo over everything to taste (start with 1–2 tbs). Sprinkle the thinly sliced fresh sage and chopped chives on top. Serve immediately while hot.
