Method
Fries
Prepare potatoes
Wash and peel the russet potatoes. Cut into 1/4–1/2 inch sticks, keeping sizes consistent for even cooking. Place cut fries in a large bowl of cold water and soak for 30 minutes to remove excess starch. Drain and rinse, then dry thoroughly with clean kitchen towels or paper towels.
Final fry
Increase oil temperature to 375°F (190°C). Fry the par-fried potatoes in batches for 2–4 minutes or until golden brown and crisp. Drain on paper towels and immediately season with kosher salt (about 1 tsp per batch). Keep warm in a 200°F (95°C) oven on a baking sheet while finishing other components.
Bacon
Cheese Sauce
In a medium saucepan, melt the unsalted butter over medium heat. Whisk in the flour to make a roux and cook for 1–2 minutes, stirring, until it smells slightly nutty but not browned.
Slowly whisk in the whole milk, a little at a time, until smooth. Continue to cook, whisking frequently, until the sauce thickens and coats the back of a spoon, about 4–6 minutes.
Reduce heat to low. Stir in the cream cheese until melted and smooth, then add the grated sharp cheddar a handful at a time, stirring until fully melted and incorporated. Whisk in ground mustard, smoked paprika, black pepper, and salt. Taste and adjust seasoning. Keep warm over very low heat, stirring occasionally to avoid skin formation; if it becomes too thick, thin with a tablespoon or two of milk.
El Gallo BBQ Sauce
In a small saucepan over low heat, combine the smoky BBQ sauce, finely chopped chipotle, and honey. Warm gently and stir until unified and glossy, 2–3 minutes. Taste and adjust heat/sweetness as desired. Keep warm.
Miso Ranch
In a small bowl, whisk together mayonnaise, buttermilk, white miso paste, minced garlic, lemon juice, dried dill, salt, and black pepper until smooth and homogenous. Taste and adjust consistency with extra buttermilk (1 tsp increments) for a pourable but thick ranch. Refrigerate until ready to use.
Assembly & Finish
Place a generous portion of hot fries on a large platter or individual plates.
Drizzle about half of the warm cheese sauce over the fries, then scatter the crispy bacon pieces evenly on top.
Spoon or drizzle the El Gallo BBQ sauce over the bacon and fries in a thin ribbon to provide smoky-sweet pockets of flavor.
Finish with zigzags or dollops of miso ranch to taste, then sprinkle the thinly sliced scallion whites and greens over everything. Add optional pickled jalapeños if using.
Serve immediately while fries and sauces are hot. Provide extra napkins—this is a rich, shareable plate.
