Prep
Make sauce and prep toppings
In a small bowl combine mayonnaise, ketchup and mustard; stir until smooth and set aside. Thinly slice the red onion and pickles. Separate lettuce into small leaves sized for buns. Cut cheese slices in half if they are full-size so each slider can have one half-slice (or cut to fit).
Split slider buns and lightly butter the cut sides. If using optional brown sugar, sprinkle evenly over buttered cut sides.
Form & Season Patties
Divide the ground beef into 8 equal portions (about 2 oz each). Gently form each portion into a thin patty slightly larger than the bun — avoid overworking the meat. Press a small dimple in the center of each patty to reduce puffing while cooking.
Season both sides of each patty with kosher salt and freshly ground black pepper. If using optional add-ins, sprinkle smoked paprika and minced garlic into the meat before forming patties or season on the surface.
Lightly brush patties with Worcestershire sauce (about 1 teaspoon distributed across patties) or mix into the ground beef before shaping.
Cook Patties
Heat a large skillet or griddle over medium-high heat. Add vegetable oil or butter and let it heat until shimmering.
Place patties in the hot pan without crowding (cook in batches if needed). Cook for 2 to 3 minutes on the first side until a brown crust forms.
Flip patties and immediately place half a slice of cheese (or a cut-to-fit piece) on top of each patty. Cook for another 1.5 to 2 minutes for medium doneness, or longer if you prefer well done. Total cook time per patty should be about 3.5–5 minutes depending on thickness.
Remove patties to a plate and tent loosely with foil to keep warm.
Toast Buns & Assemble
Return the skillet or griddle to medium heat. Place buttered bun cut sides down on the skillet and toast until golden and slightly caramelized, about 1 to 2 minutes. If using brown sugar, take care as it may caramelize faster.
To assemble each slider: spread about 1/2 teaspoon of prepared sauce on the bottom bun, add a lettuce leaf, place a cheese-topped patty, add a pickle slice and a few onion rings, then a small smear of sauce on the top bun. Close and serve immediately.
Serve
Arrange sliders on a platter. Serve hot with extra sauce, fries, or chips on the side. Leftover cooked patties can be refrigerated for up to 2 days; reheat gently to avoid drying out.
