Prepare glass

Chill a highball or large wine glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink. Empty the ice water before building the cocktail.

Extract passion fruit

If using fresh passion fruit, halve one fruit and scoop out the pulp (seeds and juice). Measure about 1 oz of pulp. If using bottled pulp, measure 1 oz.

Combine base

In a cocktail shaker, add 2 oz Helix 7 vodka, 1 oz passion fruit pulp, 2 oz pineapple juice, 0.5 tbs simple syrup, and 0.5 oz fresh lime juice.

Shake

Fill the shaker with ice, secure the lid, and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Strain over ice

Fill your chilled glass with fresh ice (about 1 cup). Fine-strain the shaken mixture into the glass to remove large passion fruit solids and most seeds, leaving some texture if desired.

Top with soda

Gently top the cocktail with 3 oz cold soda water. Stir once lightly with a bar spoon to integrate without losing too much carbonation.

Garnish and serve

Garnish with half a passion fruit floated on top or a pineapple wedge and a mint sprig. Serve immediately with a straw.
