Place 6 fresh raspberries into the bottom of a cocktail shaker or a mixing glass. Add the hibiscus syrup and the fresh lemon juice. Gently muddle the raspberries with the syrup and lemon until broken down and releasing juice, about 8–10 light presses. Do not pulverize into complete pulp — you want seeds and flesh broken but still slightly textured.

Muddle

Pour 6 oz Bonanza by Caymus Cabernet Sauvignon into the shaker/mixing glass with the muddled raspberry mixture. Add a handful of ice (enough to chill thoroughly). Stir gently for 10–12 seconds to combine and slightly chill the wine without over-diluting or bruising the wine's tannins.

Add wine and chill

Using a fine-mesh strainer (or a Hawthorne plus fine strainer), double-strain the mixture into a highball glass or large wine-style Collins glass filled halfway with large ice cubes (or crushed ice if preferred). Double-straining removes most raspberry seeds and coarse pulp while preserving flavor.

Strain

Carefully top the strained wine-raspberry base with 3 oz Fever-Tree Ginger Beer. Pour slowly down the side of the glass to retain carbonation and create a gentle layered effervescence. Do not stir vigorously — a single gentle stir (1–2 turns) is enough to integrate flavors.

Top with ginger beer

Garnish with a lemon wheel on the rim, one fresh raspberry dropped into the drink, and an optional sprig of fresh mint tucked beside the lemon. Serve immediately with a straw or cocktail pick.

Garnish and finish

This recipe yields one generous serving. Adjust ginger beer and lemon to taste if you prefer sweeter (more hibiscus syrup) or tarter (more lemon). If making a pitcher for 4, multiply wine and ginger beer accordingly and muddle raspberries with hibiscus syrup and lemon in a separate container before combining and chilling.
