Muddle fruit and mint
In a cocktail shaker or mixing glass, add the fresh blackberries and 6 of the mint leaves. Add the fresh lime juice and simple syrup. Gently muddle the blackberries and mint about 6–8 times until the berries are broken and the mint releases aroma but not pulverized.
Add whiskey and shake
Add the Jameson Irish Whiskey to the shaker. Fill the shaker with a small amount of ice (not crushed) and shake vigorously for 8–10 seconds to chill and integrate flavors.
Prepare glass
Fill a mule mug or highball glass with crushed ice to the top.
Strain and top
Double-strain the shaken mixture over the crushed ice using a fine mesh strainer (to catch seeds and mint bits). Top with the chilled Fever-Tree Ginger Beer (about 4 oz). Gently stir once or twice with a bar spoon to combine, taking care not to flatten the ginger beer.
Garnish and finish
Garnish with the reserved mint sprig (slap the sprig between your palms once to release oils), a fresh blackberry, and a lime wheel or wedge on the rim. Serve with a straw if desired.
