Classic Haus Vodka Cocktail

Prepare and Shake

Add 2 oz vodka, 0.5 oz haus simple syrup, 0.75 oz fresh lemon juice and 0.5 egg white (if using) into a cocktail shaker without ice. Perform a dry shake (no ice) vigorously for 10–15 seconds to emulsify the egg white and build foam.

Cold Shake

Add a generous handful of ice (about 1 cup) to the shaker and shake again vigorously for 10–15 seconds until the outside of the shaker is frosty and well-chilled.

Strain & Top

Double-strain into a chilled coupe or highball over fresh ice. Top with 2 oz sparkling water. Use a fine strainer to remove any foam solids if desired.

Garnish & Serve

Garnish with a lemon wheel or twist. Serve immediately.

Haus Aperol-Style Spritz

Build in Glass

Fill a wine or highball glass with large ice cubes (about 1 cup). Pour in 1.5 oz haus aperitif, then add 2 oz dry sparkling wine.

Top & Stir

Add 1 oz sparkling water. Gently stir once with a bar spoon to combine — avoid over-stirring to keep bubbles.

Garnish

Float an orange slice on top and serve with a short straw.

Haus Tequila Paloma

Prepare Glass

If salting the rim, rub a lime wedge around the glass rim and dip into a small plate of salt (about 0.25 tsp). Fill the glass with ice.

Build & Stir

In the glass or a shaker, combine 1.5 oz reposado tequila, 2 oz fresh grapefruit juice, 0.5 oz fresh lime juice and 0.5 oz haus grapefruit syrup. Stir briefly with ice to chill (or shake quickly and strain into the glass over fresh ice).

Top

Top with 2 oz sparkling water or grapefruit soda and gently stir once to integrate.

Garnish & Serve

Garnish with a grapefruit wedge and serve.

Notes & Batch Tips

For large parties, scale ingredients linearly and pre-batch the non‑sparkling components (spirits, syrups, citrus) in a pitcher; keep chilled and add sparkling water or wine to each glass at service to preserve effervescence.

Adjust sweetness to taste by increasing or decreasing the haus syrup or simple syrup. Use fresh citrus for best brightness.

If avoiding raw egg white, omit and increase haus simple syrup by 0.25 oz for mouthfeel, or use aquafaba as a vegan substitute (use 0.75 oz aquafaba instead).
