Tater Tots & Caramelized Onions

Cook tater tots

Preheat oven to package temperature (425°F / 220°C if unspecified). Spread tater tots in a single layer on a rimmed baking sheet and bake according to package directions until golden and crisp, about 18–22 minutes, turning once halfway through. Remove from oven and keep warm.

Caramelize onions

While tots bake, heat 1 tablespoon olive oil in a medium nonstick skillet over medium-low heat. Add thinly sliced onion and 1/8 tsp salt. Cook, stirring occasionally, until soft and deeply golden, 12–18 minutes. Increase heat to medium for the last 1–2 minutes, add 1/2 tsp brown sugar and 1/2 tsp balsamic vinegar, stir to deglaze and concentrate, then remove from heat and keep warm.

Bacon

In a separate skillet over medium heat, add bacon (and 1/2 tsp oil if the pan is very lean). Cook bacon until crisp but still slightly pliable for layering, about 6–8 minutes, turning occasionally. Transfer to a paper towel–lined plate to drain. Reserve about 1 tsp bacon fat in the pan for eggs if desired; discard excess.

Eggs & Cheese

Reduce heat to low–medium and add 1 tablespoon butter to the skillet with reserved bacon fat (or use butter alone if no fat). Crack 3 eggs into a bowl and whisk lightly with 1/4 tsp salt and 1/8 tsp black pepper until just combined for slightly fluffy folded eggs (or scramble to preferred doneness). Pour eggs into the skillet and cook, stirring gently or folding, until mostly set but still glossy, about 2–3 minutes. Lay 2 slices of white American cheese over the eggs, cover pan for 30–45 seconds to melt cheese, then remove from heat.

Spicy Mayo & Assembly

Make spicy mayo: in a small bowl combine 3 tablespoons mayonnaise, 1 teaspoon sriracha, 1/2 teaspoon hot sauce (optional), 1/2 teaspoon lemon juice, and minced chives or parsley. Taste and adjust heat or acidity to preference.

Assemble the HAUS: On a plate or sandwich roll if desired, arrange baked tater tots as the base (or place tots on bottom bun). Spoon a layer of caramelized onions over the tots. Place the cheesy scrambled/folded eggs on top of the onions, then lay the crisp bacon slices over the eggs. Drizzle or spread spicy mayo over the bacon. Garnish with extra black pepper or herbs if desired.

Serve immediately while tots are hot and eggs are creamy.
