Sandwich

Method

Caramelized Onions

Peel and thinly slice the onion into half-moons about 1/8 in (3 mm) thick.

Heat a medium skillet over medium-low heat. Add olive oil and butter. Once butter melts, add sliced onions and stir to coat.

Cook the onions gently, stirring every 2–3 minutes. After about 10 minutes they will soften; sprinkle in the sugar (if using) and 1/4 tsp salt. Continue to cook another 10–15 minutes until deep golden brown and sweet, reducing heat if they begin to brown too quickly. Total time ~20–25 minutes.

When caramelized, remove from heat and set aside. Keep warm or refrigerate if making ahead.

Spicy Mayo

In a small bowl combine mayonnaise, sriracha, optional extra hot sauce, lemon juice or vinegar, garlic powder, and 1/8 tsp salt.

Whisk until smooth and taste; adjust heat or acidity as desired. Cover and refrigerate until assembly.

Tater Tots

Cook tater tots according to package instructions until golden and crispy. For best results, bake at 425°F (220°C) for 18–22 minutes, turning once, or fry until crisp. Keep warm.

If using frozen and short on time, heat in a single layer in a 400°F (200°C) oven for 15–18 minutes until browned and crisp.

Eggs & Assembly

Prepare eggs

Crack the 3 eggs into a bowl and whisk lightly with 1 tsp salt and 1/4 tsp black pepper until combined.

Cook eggs (folded/omelet style)

Heat a nonstick skillet over medium heat and add 1 tbs butter. Once foaming, pour in the whisked eggs and let them sit undisturbed for 20–30 seconds. Using a silicone spatula, pull the cooked edges to the center while tilting the pan to let uncooked egg flow underneath. Continue until eggs are mostly set but still slightly glossy—about 2–3 minutes total for a soft folded texture.

Add cheese

Lay the 2 slices of white American cheese over the eggs, cover the skillet with a lid for 30–45 seconds to melt the cheese into the eggs.

Toast roll

While the cheese melts, split the roll and toast cut sides in a separate skillet or under a broiler until golden, about 1–2 minutes.

Assemble sandwich

Spread 1–1.5 tbs spicy mayo on both cut sides of the toasted roll. Place the cheesy eggs on the bottom half. Top eggs with the hot tater tots (3 pieces) arranged across the eggs, then add a generous tablespoon of caramelized onions over the tots. Finish with the top half of the roll.

Serve

Serve immediately while eggs are warm and tots are crisp. Optionally serve additional spicy mayo on the side.
