Prepare components

Cook sausage and bacon

If sausage is raw, brown the sage breakfast sausage in a skillet over medium heat until cooked through, breaking into small crumbles; drain and set aside. In the same or separate skillet cook bacon until crisp, drain on paper towels and chop into bite-size pieces.

Cook tater tots

Cook tater tots according to package directions until very crisp (baked or air-fried recommended). Once crisp, let cool slightly and roughly chop or crush into bite-size pieces so they pack well in the chimichanga.

Make miso ranch

In a small bowl whisk together mayonnaise, Greek yogurt, white miso paste, lemon juice, garlic powder, dried dill and salt. Add 1 teaspoon water if too thick to make a pourable ranch. Taste and adjust salt or lemon as needed. Refrigerate until assembly.

Make maple sriracha

In a small bowl combine maple syrup and Sriracha; whisk until homogenous. Adjust heat/maple ratio to taste. Keep at room temperature.

Egg scramble

In a bowl whisk the 3 eggs with 2 tablespoons milk, 1 teaspoon salt and 1/2 teaspoon black pepper until combined. Heat a nonstick skillet over medium-low and add 1 teaspoon butter or oil to coat. Pour in the eggs and let sit briefly, then gently stir with a rubber spatula, folding eggs until they reach soft-custardy curds but are fully cooked, about 3–4 minutes. Remove from heat.

Assemble chimichanga

Warm the flour tortilla for pliability: microwave 15–20 seconds or heat in a dry skillet 10–15 seconds per side. Lay tortilla flat on a work surface.

Layer fillings on the lower third of the tortilla: place the scrambled eggs, then sprinkle the crumbled sage sausage (about 3 oz), then chopped bacon, then the crispy tater tot pieces (about 1 cup), and top with torn/shredded white American cheese. Leave a 1–2 inch border on each side to fold.

Fold the chimichanga: fold left and right sides over the filling, then fold the bottom up over the filling and roll tightly away from you to create a sealed burrito. Tuck ends under if needed. For extra sealing, brush a small amount of water or beaten egg along the final seam and press gently.

Pan-fry method (recommended for control): In a skillet over medium heat add 1–2 tablespoons butter or neutral oil. Once shimmering, place seam-side down and cook 2–3 minutes until golden and crisp, then turn and cook another 2–3 minutes until all sides are golden and cheese is melted. Transfer to a paper towel-lined plate to drain briefly.

Deep-fry method (optional): Heat 1/2 cup neutral oil in a skillet to 350°F (175°C). Fry chimichanga seam-side down for 1–2 minutes, then turn and fry until evenly golden, about 3–4 minutes total. Drain on paper towels.

Finish & serve

Slice chimichanga in half on the diagonal. Drizzle miso ranch and maple sriracha over the top (about 1–2 tablespoons each, or to taste). Garnish with chopped chives or scallions and serve with a lime or lemon wedge on the side.

Serve immediately while hot and crisp. Leftovers can be wrapped and refrigerated for up to 24 hours; re-crisp in a 350°F oven for 8–10 minutes.
