Prepare Glass

Chill

Select a large wine glass or rocks glass. Fill the glass generously with ice cubes to chill and create room for the sparkling wine and Aperol.

If you prefer a colder drink, briefly rinse the glass with cold water before adding ice, then discard the water and add fresh ice.

Build the Cocktail

Add Aperol

Pour 3 tablespoons of Aperol over the ice. This forms the bitter-sweet base of the spritz.

Add Cava

Gently pour 3 tablespoons of Campo Viejo Cava Brut (or another dry sparkling wine) into the glass. Pour slowly down the side of the glass to preserve bubbles.

Top with Soda

Add 1 tablespoon of soda water to lengthen the drink and add effervescence. Stir gently once or twice with a bar spoon to combine—do not over-stir to avoid flattening the bubbles.

Finish & Serve

Garnish the rim or float an orange slice in the drink. Serve immediately while cold and bubbly.

Optional: Adjust proportions to taste — a classic ratio is roughly 3 parts Prosecco/Cava : 2 parts Aperol : 1 part soda. For a slightly less bitter spritz, increase sparkling wine by 1 tablespoon.
