Method

Form patties
Divide the mixture into four equal portions (about 4 ounces each). Form into round patties about 3/4-inch thick and slightly wider than the brioche rolls; press a shallow dimple in the center of each patty with your thumb to prevent puffing during cooking.
Grill patties
Place patties on the hot grill. Cook for 3–4 minutes per side for medium-rare to medium (internal temperature 130–135°F for medium-rare, 140°F for medium). If adding cheese, place a slice on each patty during the last 1 minute of cooking and close the lid to melt. Do not press down on patties while grilling.
Rest patties
Transfer cooked patties to a plate and tent loosely with foil. Let rest for 3–5 minutes to redistribute juices.

Prep tomato and onion
While patties cook, slice the tomato into 1/4-inch thick slices. If using, thinly slice the red onion and separate lettuce leaves, patting dry with paper towels.
Assemble burgers
Spread about 1 tablespoon of the prepared sauce on the bottom bun. Place lettuce leaf on the sauce, then the rested beef patty, tomato slice, onion (if using), and pickles. Spread sauce on the top bun and close the burger.

Make the sauce
In a small bowl mix mayonnaise, mustard, ketchup, dill pickle relish, lemon juice, salt, and pepper until smooth. Taste and adjust seasoning. Refrigerate until assembling; makes roughly 1/2 cup.
