Prepare pineapple
Cut off top and bottom of pineapple. Stand upright and slice off skin in vertical strips, removing eyes. Quarter lengthwise, remove core from each quarter, then slice crosswise into 1/2-inch thick pieces or bite-sized wedges. Arrange on platter.
Prepare melon
Halve the melon and remove seeds. Slice away rind and cut flesh into 1-inch cubes or 3/4-inch half-moons. Arrange on platter in its own section.
Prepare strawberries
Rinse strawberries and hull (remove green tops). For medium/large berries, halve or quarter depending on size so pieces are bite-sized. Toss gently with 2 tablespoons lemon juice to slow browning and add a bright flavor. Place on platter.
Garnish fruit
Scatter mint leaves among the fruit sections for aroma and color. Keep juicy fruits (strawberries, melon, pineapple) slightly separated from cheeses to prevent moisture transfer.

Prepare aged cheddar and manchego
Slice aged cheddar and manchego into 1/4-inch thick slices or 3/4-inch cubes for easy picking. Fan slices or stack small piles on the platter with space between to allow guests to cut or pick pieces.
Prepare brie
If serving at room temperature, remove brie from refrigerator 30–45 minutes before serving so it softens. Right before serving, score the rind in a shallow crosshatch or leave whole. Place the wheel on the platter or on a small board.
Prepare goat cheese
Crumble or slice the goat cheese log into medallions about 1/2-inch thick. Place next to crackers and honey for easy pairing.
Accents & Assembly
Arrange fruit sections (pineapple, grapes, melon, strawberries) in their own areas around the cheeses, keeping particularly juicy fruits slightly apart from soft cheeses like brie and goat cheese.
Insert toothpicks or small skewers into a selection of fruit pieces (grapes, pineapple wedges, melon cubes) to make them easy to grab. Provide a small pile of extra toothpicks on the board.
Final touches: tuck mint leaves around the board for color, wipe any juice drips, and ensure knives for spreading/ cutting are available (one small knife for brie, one for semi-firm cheeses).
