Make the marinade/sauce

In a medium bowl, whisk together 3 tbs Korean BBQ sauce, 2 tbs soy sauce, 1 tbs gochujang, 1 tbs rice vinegar, 1 tbs brown sugar, 1 tsp sesame oil, minced garlic, grated ginger and 1 tsp black pepper until smooth and sugar is dissolved. Taste and adjust heat or sweetness as desired. Reserve about 1 tbs of the sauce for brushing while serving (set aside separately).

Prepare beef

Pat the beef tenderloin dry with paper towels. Season lightly with 1 tsp salt and toss the cubes into the bowl with the marinade. Mix gently to coat all pieces. Cover and refrigerate to marinate for 20–30 minutes (up to 2 hours for more flavor). If short on time, 20 minutes is sufficient because tenderloin takes flavors quickly.

Thread onto skewers

If using bamboo skewers, ensure they soaked for at least 30 minutes prior. Thread beef cubes onto skewers, leaving a small gap between pieces for even heat circulation. Discard excess marinade that has been in contact with raw meat; reserve the previously set aside 1 tbs sauce for finishing or heat the leftover marinade to a boil for 1–2 minutes if you want to use it for brushing.

Preheat grill or broiler

Preheat an outdoor grill to medium-high (about 400–450°F / 200–230°C) or position an oven rack 6 inches from the broiler and preheat the broiler. Lightly brush the grill grates or a cast-iron skillet with 1 tbs vegetable oil to prevent sticking.

Cook skewers

Place skewers on the hot grill or under the broiler. Cook for 2–3 minutes per side, turning once or twice, brushing once with the reserved sauce during the final minute of cooking. Total cook time should be about 6–9 minutes depending on cube size and desired doneness; aim for medium-rare to medium (internal temperature 125–135°F / 52–57°C) for tenderloin. Remove from heat and let rest 3–5 minutes; carryover cooking will raise the temperature slightly.

Finish

After resting, brush skewers lightly with any warmed reserved sauce or a little more BBQ sauce if desired. Sprinkle with toasted sesame seeds and sliced green onions.

Garnish & Serve

Transfer skewers to a serving platter. Serve hot with lemon or lime wedges on the side for optional brightening. Recommend serving 2 skewers per person as an appetizer.
