Prepare Glass
Take a highball or Collins glass and rub the lime wedge around the outer rim and inner lip where you'll drink. Spread the tajín on a small plate, then gently press the wet rim into the tajín so it adheres evenly. Set the glass aside to allow the rim to set while you prepare the cocktail.
Muddle Watermelon & Mint
In a mixing glass or shaker, add the cubed fresh watermelon and 6 mint leaves. Using a muddler, press and twist firmly 8–10 times until the watermelon releases juice and the mint is fragrant but not pulverized. Aim for a pulpy, juice-rich mixture rather than a puree.
Combine Ingredients
Add the vodka (2.5 oz), fresh lemon juice (0.5 oz), and simple syrup (0.5 oz) to the muddled watermelon and mint. Fill the shaker with a small amount of ice (not crushed) and shake vigorously for about 10 seconds to chill and slightly dilute the mixture.
Assemble Drink
Fill the tajín-rimmed glass with 2 cups of crushed ice. Strain the shaken watermelon-vodka mixture over the crushed ice, pressing with the back of a spoon to extract additional juice from the solids if desired. Top with 3 oz chilled lemonade and gently stir once or twice to combine while preserving the crushed-ice texture.
Garnish & Serve
Place a mint sprig and optional small watermelon wedge on the rim or float them on top. Serve with a straw. Suggest serving immediately so the crushed ice remains slushy and the tajín rim stays intact.
