Pre-chill and prepare

Chill a copper mug or highball glass in the freezer for 5–10 minutes (optional). While chilling, measure out Seedlip Grove 42, fresh lime juice, and simple syrup. Have ginger beer cold.

Build the cocktail

Add crushed ice to the chilled mug until about three-quarters full (roughly 1 cup). Pour 2 oz Seedlip Grove 42 over the ice, then add 0.5 oz fresh lime juice and 0.25 oz simple syrup.

Top and finish

Top the drink with 4 oz cold ginger beer. If using bitters for added aromatic complexity, add 2 dashes and gently stir twice with a bar spoon to combine — avoid over-stirring to preserve effervescence.

Garnish & Serve

Gently mound a little extra crushed ice if desired to create a frosty presentation. Garnish with a lime wheel on the rim, a slice of candied or fresh ginger tucked into the ice, and optionally a mint sprig slapped once and placed beside the ginger.

Serve immediately with a straw. Encourage the guest to taste the balance of bright citrus, bitter orange notes from the Grove, and the spicy ginger beer — adjust future pours with a splash more simple syrup or lime to preference.
