Chill & Press

Chill a rocks glass or short tumbler in the freezer for 5–10 minutes. If you don't have fresh beet juice prepared, juice 1 medium organic beet until you have 2 oz, then chill.

Prepare crushed ice by placing ice cubes in a clean kitchen towel and crushing with a rolling pin or using a blender/pail crusher. Fill a bowl with crushed ice and have it ready.

Muddle & Shake

Muddle the Mint

In a cocktail shaker, add the fresh mint leaves and the simple syrup. Lightly clap or slap one mint sprig to release aroma and add to the shaker. Gently muddle the mint with a few presses — just enough to bruise the leaves and release oils without shredding them (about 6–8 light presses).

Combine Liquids

Add the gin, chilled beet juice, and fresh lemon juice into the shaker with the muddled mint and syrup. If using bitters, add 1 dash now.

Dry Shake (optional)

If you prefer a slightly frothier texture and better mint integration, seal the shaker and shake without ice for 6–8 seconds.

Shake with Ice

Add a handful of ice to the shaker and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Build & Serve

Remove the chilled glass from the freezer. Fill the glass with crushed ice, leaving about ½ inch from the rim for garnish.

Double strain the shaken mixture over the crushed ice using both the shaker strainer and a fine mesh strainer to keep mint fragments out.

If desired, top very gently with 1 oz cold club soda for a lighter mouthfeel. Give the glass a gentle stir (1–2 turns) to integrate.

Garnish with a fresh mint sprig (slap it once to release aroma), a thin lemon wheel on the rim or floated, and an optional micro beet slice for visual contrast. If using bitters for aroma, add 1 tiny dash on top of the finished drink.

Serve immediately over crushed ice with a short straw or stirrer. Encourage the drinker to inhale the mint aroma before sipping to complete the sensory profile.
