Method
Prepare Scrambled Eggs
Crack the eggs into a medium bowl. Add the milk, 0.5 teaspoon salt, and the black pepper. Whisk briskly until the mixture is uniform and slightly frothy, about 20–30 seconds.
Pour the egg mixture into the skillet. Let sit undisturbed for 10–15 seconds until edges begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center, forming large soft curds. Continue folding every 10–15 seconds until eggs are mostly set but still moist and slightly glossy, about 2–3 minutes total. Remove from heat immediately to prevent overcooking. Taste and adjust with the remaining 0.5 teaspoon salt if needed.
Assemble & Cook Quesadillas
Fold the tortilla over to create a half-moon. Press gently with a spatula to compact the filling. Cook for 2–3 minutes until the bottom is golden brown and cheese begins to melt. Carefully flip and cook the other side another 1.5–2 minutes until golden and cheese is fully melted.
Transfer the cooked quesadilla to a cutting board and let rest 1 minute, then slice into 3 wedges. Repeat the assembly and cooking steps with the second tortilla, remaining cheese, eggs, guacamole, and salsa.
