Brew decaf tea
Bring 1 cup (240 ml) of water just to a boil, then remove from heat and let sit 20–30 seconds to drop slightly below boiling. Steep the 2 decaffeinated tea bags in the hot water for 4–5 minutes for full flavor without bitterness. Remove and discard tea bags. Allow tea to cool for 5–10 minutes at room temperature.
Passion Fruit Syrup
Make syrup
Combine 4 oz passion fruit pulp, 3 tablespoons granulated sugar, and 2 tablespoons water in a small saucepan. Warm over medium-low heat, stirring until the sugar dissolves and mixture becomes slightly thickened, 3–4 minutes. Do not boil vigorously—just simmer gently. Remove from heat and stir in 1 teaspoon fresh lemon juice to brighten the flavor. Taste and add a little more sugar if you prefer sweeter. Let the syrup cool to room temperature (about 10 minutes).
Optional seed straining
If you prefer a seedless drink, pour the syrup through a fine mesh sieve into a bowl or measuring cup, pressing on the solids to extract as much pulp as possible and leaving seeds behind. Discard seeds.
Finish & Serving
Assemble the drink: Fill a tall glass with 1 cup ice cubes. Pour the cooled brewed decaf tea over the ice. Add the cooled passion fruit syrup (about 2–3 tablespoons, or more to taste — use roughly 1.5 oz/45 ml syrup). Top with 1 cup cold water or chilled coconut water and stir gently to combine.
Adjust sweetness and chill: Taste and add more passion fruit syrup if you prefer it sweeter or more intensely flavored. If drink is too strong, add an extra splash of cold water or coconut water and stir.
Garnish and serve: Garnish with a spoonful of fresh passion fruit seeds or a thin lemon wheel and a mint sprig if using. Serve immediately while cold.
